Eileen

“I built my first guest house here in 2005. Twenty years later I still check every suite myself before you walk in — because the difference between a good stay and a great one is almost always a small thing somebody noticed.”

Palm Bay started with Shangri-La, a bed and breakfast Eileen built on Grand Cayman in 2005. Four suites and two decades later, the operation is still deliberately small: she answers the messages, she keeps the guidebook, and she is the one who tells you which beach is calm the week you are here.

The guidebook The thing guests write about most. Twenty years of restaurants, dive sites and shortcuts, kept current.
She replies herself No agency, no channel manager, no chatbot. Usually within a few hours.
One standard All four suites are refreshed frequently, not just repaired when something breaks.
Owner, not manager Every suite on this site belongs to her. Nothing here is somebody else’s listing.

Our story

Three promises we have kept for twenty years

They have not changed since the first guest booked Shangri-La in 2005, because they are the only three things that actually decide whether a stay works.

Clean and well maintained

Our properties are impeccably cared for, with frequent refreshing to hold the standard. It is the first thing guests write about and the reason they come back.

The place looks like the pictures

Our advertising is beautiful and honest. Nothing is shot with a wide lens to make a room look like a hall. What you see is the suite you get.

We communicate early and often

We want your stay to be hassle free and enjoyable, so you hear from us before you arrive, not only when something goes wrong.

Booking direct

Booking straight with Eileen

Choose your dates, see the whole price before you commit to anything, and hear back from the owner herself. Four steps, no account to create, nothing charged until she has confirmed the suite is yours.

Pick your dates

Booked nights are greyed out because the calendar you are looking at is Eileen’s own. What you see is what is actually free.

See the whole price

Nightly rate, cleaning, tax and any long-stay discount, all before you send anything. No fee appears at the last screen.

Send the request

Nothing is charged. Your dates are held while Eileen checks, and you get a reference number by email straight away.

She replies, personally

Usually within a few hours, with confirmation, payment details and the answer to whatever you asked in the message box.

This was our first stay in Grand Cayman and we were very pleased with our experience at Eileen’s place. Her guidebook is phenomenal! Our room was very clean and well equipped.

Brock Noblesville, IN

This stay was so fun and relaxing in all the right ways. Absolutely recommended for a leisurely vacation.

Katie New York, NY

Honestly the best host ever, and I’ve stayed all over the world. Highly recommended!

Before you book

The questions guests actually ask

How do I book a Palm Bay suite?

Pick your dates on the suite page and send the request. Eileen reads every request herself and replies personally, usually within a few hours, to confirm the suite and send payment details. Nothing is charged when you submit the form.

Is it cheaper to book direct than through a platform?

Yes. Booking here skips the platform guest service fee, which is typically around 14% of the stay. The nightly rate, cleaning fee and government accommodation tax are the same either way.

Where exactly are the suites?

All four are in West Bay, Grand Cayman. Calypso Cove 1 and 6 are at 80 Town Hall Road, twenty-five steps from the beach and a minute from the dive boat docks. Evans Close 1 and 4 are at 10 Evans Close, an eight-minute walk from the beach.

What is included with every suite?

Snorkel gear, two beach chairs, a small cooler, fast Wi-Fi, air conditioning, a smart TV, an iron, a kitchen or kitchenette and washer and dryer access. You do not need to hire beach kit.

How many people can stay?

Evans Close 1 sleeps four in two queen bedrooms with two bathrooms. Calypso Cove 1, Calypso Cove 6 and Evans Close 4 each sleep two. Booking two suites for a group is possible — ask Eileen and she will hold both.

What is the minimum stay?

Three nights for Calypso Cove 1, Calypso Cove 6 and Evans Close 1, and two nights for Evans Close 4. Stays of seven nights or more take a long-stay discount automatically.

Who is Eileen?

The owner and your host. She has been in Cayman hospitality for twenty years, since building the Shangri-La bed and breakfast in 2005, and holds Superhost status with 4.89 across more than 330 reviews. Her guidebook is the thing guests mention most.

Can I reach you before I book?

Yes, and you should. Call or WhatsApp (345) 525-1348, or email eileen@palmbaycayman.com. Eileen would rather answer a question first than have you guess.

Still not sure? Message Eileen or send her a note.
